Recipe of the Week

Okay, so I may not be a Rachel Ray or Giada De Laurentiis but I got this brilliant idea to post a favorite family recipe once a week and you all can give it a try too. Also, feel free to share any of your favorite recipes I could use some new ideas.

CHEESY CHICKEN AND CHIP BAKE

4-5 boneless/skinless chicken breast cooked and cubed
1- can cream of chicken
1- small can geen chillis chopped
1- 8 oz. sour cream
1/2 - of a 14 oz. can petite diced tomatos (optional, i prefer w/o.)
2 cups shredded velveeta or cheddar cheese
bag of tostito tortilla chips
salt, pepper and a dash of garlic powder to season.

preheat oven to 350. stir well the cream of chicken, green chillis, sour cream, tomatos (if you are using them) and seasonings all together in a bowl. dump cooked cubed chicken in a 9x13 casserole dish and top with mixture spreading evenly over chicken. on top of that, layer with as much cheese as you wish and top it off with a layer of crushed tortilla chips.
bake about 30 minutes or until cheese is well melted and it is bubbly!
i like to make a salad and dinner rolls to go along with this. it is sooo delicious, enjoy! :)

I finally got my blog up and running....thanks for the info on the website for templates, it was a HUGE help! I'll try to post some recipes too!! And I will definitely have to try this recipe....sounds really yummy.
